Earlier this month, I finally got to make Tequila Lime Chicken
Ingredients:
1 Whole Lime, Juiced and Zested
2 Cloves Garlic, Peeled or Powder
1 Whole Jalapeno, Sliced-I didn't have jalapeno, so I didn't use this
1/4 Teaspoon Salt
1/2 Cups Cilantro
1/4 Cups Tequila
2 Tablespoons Honey
3 Tablespoons Olive Oil
2 Tablespoons Orange Juice
2 whole Boneless, Skinless Chicken Breasts
1/4 Cup Cheese, Grated
Combine lime juice, garlic, sliced jalapeno, olive oil, salt, cilantro, and tequila you can blend or put it in the food processor,if you want.
Place chicken in a plastic bag and pour in marinade. Seal bag and marinate for several hours making sure to turn it.
I cut the chicken in strips. Cook in a skillet on medium. Cook until completely done.
The tequila was really strong in the recipe, so I may tweak it and add more citrus and honey next time.
