Louisiana Thanksgiving

With my uncle's health failing, we decided to head to Louisiana for Thanksgiving.

Down South food for Thanksgiving is a bit different.

In the south, they don't have mashed potatoes and gravy for Thanksgiving. Instead, they have potato salad. For me, potato salad is for summer barbecues.

I also, had for the first time, carrot souffle. It was so good and sweet; my fav! It was a great addition to our Thanksgiving dinner and I plan to make it for Christmas. It was store bought, so I couldn't get the recipe, but here's what I found on Pinterest.

Also, the green bean casserole had cheese instead of cream of mushroom. There was Cajun fried turkey, roast and rice, stuffing, ham, and thankfully a salad. ;)

The weather was terrific and it was great so get to see so many family members. Now, I have baby fever!

Recipe #22: Cranberry Apple Cream Cheese Mold

For roughly 15 years, I have been making this mold. My grandma loves and requests this yearly for Thanksgiving.

Here's the recipe:
1-1/2 cups boiling water
1 pkg. (8-serving size) or 2 pkg. (4-serving size each) JELL-O Cranberry Flavor Gelatin
2 cups cold apple juice or cold water
1 medium red apple, cored, quartered and thinly sliced
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened

I add a whole can of whole cranberry sauce. I also add 1/3 cup of chopped walnuts.

Black Friday

Black Friday, key word FRIDAY! Christmas shopping has gotten out of control. Stores should not be open on Thanksgiving! I'm especially saddened that K-Mart has chosen to be open all of Thanksgiving Day into Black Friday. Their poor workers won't get any rest or time with their families. People should be able to spend that day with their family, not dealing with shoppers. It's one day where we focus on what we're thankful for, not a day to stress over the list of people we need to buy presents for. The commercialism of this time of year bothers me. Anyone else feel the same?
